Fresh Rosemary sheep milk cheese is patterned after Brebis, a traditional French sheep milk cheese, and is similar to ricotta, flavored with dried rosemary. Packaged in an adorable 3.5oz tub, a reclosable 16oz size, & a 10lb food service size. Our Fresh Rosemary sheep milk cheese is lactic style and fresh, meaning it’s un-aged. It ripens and drains for 48 hours, after which it is mixed with dried herbs and salt, promptly packaged. This sheep cheese has a soft, delicate curd. It crumbles well when cold, and becomes more spreadable as it warms up. For people familiar with Fresh Chèvre, that is a good comparison; but without the gaminess sometimes associated with goat cheese.
