How it's packaged
Every tray is vacuum sealed — no oxygen gets in. That's what gives you a minimum of 14 days of freshness with zero preservatives, and it's why the seal stays tight no matter which way the tray is turned.
Why plastic, and not “compostable”
You may have seen trays designed to look like plant-based, compostable packaging. We looked into those closely, and chose not to use them. Here's why: they still contain a plastic liner underneath — without it, they'd soak through — and they're manufactured overseas, where we have far less visibility into what that liner is made of.
We use plastic trays instead, made here in the U.S., sourced specifically because we know exactly what's in the material: no BPA, and none of the “forever chemicals” found in some packaging.
A tray that looks compostable isn't automatically the cleaner choice. We'd rather use plastic we can vouch for than a liner we can't.
Reheating, safely
It's true that heating plastic may cause it to leach — that's a real concern, and we don't want to wave it away.
It's also why we never heat your food ourselves. From the moment it's packed to the moment it arrives, it stays chilled. It's only ever in this tray for up to 14 days, not the months a packaged product typically spends in transit and storage.
How you reheat it is entirely up to you:

A tray made mostly of paper already exists as a technology and is used widely throughout Italy. We're exploring adopting it here as part of our ongoing commitment to human health and the health of the environment. It would still need a thin plastic liner to seal properly, but it would remove the outer band entirely. We're weighing it against the risk of trays getting crushed in transport, and expect to make a decision soon.
